Old fashioned Apple Crescents

January


Baby moles
3/4 c. sugar
1 T. cornstarch
1 t. cinnamon
6 apples, peeled, cored, sliced
1 T. lemon juice
2 8" round unbaked pie shells

Mix together sugar, cornstarch and cinnamon. Add apples and toss to coat. Cut pie shell dough n halves. Divide filling in4 portions and place on dough. Fold dough to form crescents. Seal edges and slit the tops 1" in 2 places. Bake 20 minutes at 425*. Serves 6                                               

Rice Pudding

January


3 eggs
2 c.milk
1/2 c. sugar
1 t. vanilla
1/2 t. salt
2 c. cooked rice

In a mixing bowl, combine ingredients. Turn into a casserole dish. Bake uncovered, 30 minutes at 325*.

Apple Pie

January

unbaked double crust
2#  apples, sliced for baking
1 T. lemon juice
1 c. sugar
2 T. flour
1 t. cinnamon
dash nutmeg
1 T. oleo

In bowl, combine sugar, flour, cinnamon and nutmeg. Gently coat lemon sprinkled apple slices. Fill bottom crust with apples. Dot with oleo. Arrange top crust on pie. Make a few slits. Seal edges and flute. Sprinkle a little sugar on crust. Bake 25 minutes at 375*. Cool.

I use apples given to me from family and friends and return it with this pie.

On fresh Peas: To cook 4 1/2 lbs. fresh peas, shell them and boil in salted water 8 minutes or until tender.
Drain.

Cherry Cheese Bars

January


Crust:
1 c. walnut pieces, divided
1 1/4 c. all-purpose flour
1/2 c. brown sugar, packed
1/2 butter flavored shortening
1/2 c. coconut, flaked
Filling:
2 8oz. pkgs. cream cheese, softened
2/3 c. sugar
2 eggs
1 t. vanilla
1  2.10z. can cherry pie filling

Baby cardinal
Reserve 1/2 c. walnuts fr garnish, chop remaining pieces very fine
For crust: Combine flour and brown sugar. Cut in shortening until finely crumbled. Add the chopped nuts and coconut. Mix well. Remove 1/2 cup and set aside. Press remaining crumbs into a buttered 13" x 9" x 2"
pan. Bake 13 minutes at 350*.
For filling, beat cream cheese, sugar, eggs and vanilla until smooth. Spread over hot crust and bake 15 minutes longer. Spread on cherry pie filling, garnish with crumbs and nuts.

Spiced Rum Pecan Pie

January 6, 1986


1 9" unbaked pie shell
4 eggs
1/4 c. spiced rum
1 1/2 c. dark corn syrup
2 T. oleo, melted
1/2 t. salt
1 1/2 c. pecans

Preheat oven to 350*. In a large mixing bowl, whip eggs lightly and add rm, corn syrup, oleo and salt.
Arrange pecans in pie shell. Pour in filling. Bake 45 minutes or until pie is set.

A restaurant review: "It would have been faster to walk to the grocers, buy lettuce, rinse it in the bathroom sink, mash the anchovies with the dull end of the pen and grate the Parmesan cheese against the table leg
than to get a Cesar Salad on a bust weekday.

Apple Crisp

January

1 1lb4oz. apple pie filling
3/4 c. corn flakes, crushed
1/2 c. all-purpose flour
1/2 t. salt
1/2 c. brown sugar, packed
1/2 c. pecans, chopped
1/2 c. oleo, softened
1 T. lemon juice
1 t. cinnamon

For topping, mix together cereal, flour, salt, brown sugar, pecans and oleo. Set aside.  In an ungreased 8" square glass casserole, stir together pie filling. lemon juice and cinnamon. Spread topping on apple mixture. Bake 30 minutes at 400* or until crisp.  Serves 4

Butterscotch Pudding

January 14, 1985


1/2 c. brown sugar
3 T. cornstarch
dash salt
2 c. milk
3 /4 t. vanilla

Combine sugar, cornstarch and salt in a saucepan.  Stir in milk. Cook over medium heat, stirring, bring to a boil and boil 1 minute. Stir in vanilla. Pour into dessert dishes. Makes 2 cups.

Fancy Shake

January


4 c. milk
3 T. chocolate milk mix
2 bananas, mashed
1/2 pint vanilla ice cream

Combine well. Cover and chill until serving. If you have a blender, this is better. Serves 2

After Dinner Pie

January


2 c. chocolate cream sandwich cookies. crushed
1/4 c. oleo
1/4 c. milk
1 small jar marshmallow creme
dash peppermint extract
3 drops green food color
2 c. whipped cream

Baby llama
Combine crumbs with oleo., reserving 1/2 cup for garnish. Press into bottom of a 9" pie plate. Chill while you continue this recipe. Gradually add milk to marshmallow creme, mixing until well blended. Add extract to taste, add food color drop by drop, fold in whipped cream and pour into crust. Freeze until firm.

Carrot Pineapple Salad

December





2 small boxes lemon gelatin

1 squat can crushed pineapple
2 c. grated carrots


Prepare gelatin. When cooled, add pineapple and carrots. Chill until set.

Chocolate Peanut Pudding

January


2 c. cold milk
1/4 c. peanut butter
1 small box instant chocolate pudding/pie mix
3 T. chopped peanuts

On low speed of mixer, gradually beat milk into peanut butter. Add pudding mix slowly and continue beating until mixture is slightly thickened.Pour into serving bowls. Makes 2 cups

Creamy Lemon Pie

January 17. 1988


1 pie shell, baked, any type
3 eggs, separated
1 14oz, can sweetened condensed milk
1/2 c. lemon juice
3/4 t. lemon peel
3 drops yellow food color
1/4 t. cream of tartar
salt
1/3 c. sugar

Preheat oven to 350*. In a medium bowl, beat egg yolks, Stir in milk, lemon juice and lemon peel, and coloring. Place pie shell on a cookie sheet and pour mixture into it. In a small mixing bowl, beat egg whites with cream of tartar and salt until foamy, slowly  add sugar, continue to beat until almost dry. Spread on pie, making sure to seal edges. Bake 13 minutes or until golden brown. Cool 1 hour. Keep chilled.

Sugar Puffs

January 8, 1992


1 c. milk
1/4 c. water
1/4 c. sour cream
3 T. oil
3 to 3 1/2 c. flour
1 c, rolled oats
1 1/4 t. salt
1 t. grated orange peel
1 pkg. dry yeast
1 egg
topping: mix together: 1/2 c. melted oleo, 3/4 c. sugar, 1 1/2 t. cinnamon, dash ground ginger

In a medium saucepan, heat milk, water, sour cream and oil until very warm. Lightly spoon flour into a
measuring cup and level off. In a large mixing bowl, combine warm liquid with 1 c, of the flour, oats, sugar,
salt and orange peel, yeast and egg. Beat 2 minutes on medium speed. Stir in remaining flour. Knead 5 minutes on a floured surface. Place in a greased bowl, cover and let rise 1 hour. Divide dough into 18 balls and place in greased muffin tins. Cover and let rise 45 minutes. Bake 20 minutes at 375*. Cool 3 minutes.
Roll puffs in the topping.

Pumpkin Bars

January


2 c. canned pumpkin
1 1/2 c. sugar
3/4 c. oil
2 c. all-purpose flour
1/2 t. salt
2 t. cinnamon
1 t. baking powder
1 c. chopped pecans

In a mixing bowl, blend pumpkin, sugar and oil. Set aside. In another bowl, blend remaining ingredients, except pecans. Ad to pumpkin mixture. Stir in pecans and blend well. Place in an ungreased 11" x 9" baking pan. Bake 25 minutes at 350*

I love this recipe. It is from step-mother, Josephine's collection. She gets an  A+ in baking.

Frozen Yogurt

January 31, 1996


2 c, plain yogurt
1/4 c. orange juice concentrate
1 t. vanilla extract

In a medium bowl, mix ingredients. Freeze 4 hours, stirring hourly. Serves 4
