Old fashioned Apple Crescents

January


Baby moles
3/4 c. sugar
1 T. cornstarch
1 t. cinnamon
6 apples, peeled, cored, sliced
1 T. lemon juice
2 8" round unbaked pie shells

Mix together sugar, cornstarch and cinnamon. Add apples and toss to coat. Cut pie shell dough n halves. Divide filling in4 portions and place on dough. Fold dough to form crescents. Seal edges and slit the tops 1" in 2 places. Bake 20 minutes at 425*. Serves 6                                               

Rice Pudding

January


3 eggs
2 c.milk
1/2 c. sugar
1 t. vanilla
1/2 t. salt
2 c. cooked rice

In a mixing bowl, combine ingredients. Turn into a casserole dish. Bake uncovered, 30 minutes at 325*.

Herb and the Tomatoes

January


4 large tomatoes
3 T. green onions
1/4 c. oleo
1 t. salt
1/4 t. Italian seasoning
1/2 t. pepper
1/4 t. leaf marjoram
1/2 bay leaf, crushed or 1/8 t. ground
1 1/2 c, dry bread crumbs

Core tomatoes and cut in half lengthwise. Place in a shallow casserole dish. Saute onions in oleo in skillet until tender. Add seasonings and crumbs. Spoon over tomatoes. Bake 20 minutes at 360*. Serves 4

For Christmas, my youngest daughter, Devin, gave me a Chia Herb kit. I used marjoram from it for this.
I love it!

To peel tomatoes, dip them in boiling water a few seconds and the skin comes right off.

Pot Roast Casserole

January

1 onion, sliced
1 t. sugar
1 T. oleo
3 c. mashed potatoes
8 slices left over roast or deli roast
1 c. frozen peas
1 can beef gravy
2 T. Parmesan cheese

Place onions in a dry hot skillet. Sprinkle sugar over onions and fry until onions begin to brown. Add oleo and cook until tender. Remove from heat. Spread 1/2 of the mashed potatoes in a greased 2 qt. casserole. Arrange meat on top, then add onions, peas and gravy. Sprinkle on cheese. Bake 30 minutes at 350*.
Serves 5

Best Pot Of Beans

January


1lb. dry pinto beans
1 onion, chopped
1 green bell pepper
1/2 lb. bacon, chopped
3/4 t. Worcestershire sauce
1 T. salt
1 1lb. can tomatoes, chopped
2 T. brown sugar
2 t. mustard
splash hot pepper sauce
2 T. oil

Cover beans with water in a dutch oven. Bring to a boil, cover, simmer 1 hour. In skillet, with oil, saute vegetables 5 minutes. Add to beans with rest of ingredients. Cover and simmer, checking water every half hour, until beans are done, about 2 1/2 hours. Serves 8.

Taco Spaghetti

January, 9, 1988

8oz. dry spaghetti
3 T. oleo
1 egg, beaten
1/2 c. sharp cheddar cheese, grated
1 lb. ground beef
1/2 c. onion, chopped
1/3 c. green bell peper, chopped
1 80z. can tomato paste
1 4oz. can green chili peppers, undrained
3/4 t. chili powder
salt / pepper
1/2 c. monteret jack cheese, shredded
1/2 c. ripe olives, sliced
1 tomato, sliced thinly

Cook pasta, drain and return to pan. Add oleo and egg, mix well. Press onto sides and bottom of a 10" pie plate. Sprinkle 1/2 cup of either cheese ocer spaghetti. Bake 8 minutes at 375*. In skillet,. saute meat with onion and bell pepper. Add tomatoes, tomato sauce, chili peppers and seasonings. Spoon over spaghetti crust. Bake 15 minutes. Sprinkle on cheeses and bake 2 minutes. Sprinkle on tomatoes. Serves 8.

Chicken Salad Veronique

January 3, 1994


1 envelope french dressing mix
2 T. orange juice
2 c. frozen veggies, at least 2 varieties
2 c. cooked chicken, cut in strips. cubes will do
1/2 c. seedless grapes, halved
2 T. sliced almonds
iceberg lettuce leaves

Prepare dressing mix using orange juice in place of water. Place veggies in colander and hold under running water until thawed. Toss chicken, veggies, grapes and 1/2 cup of the dressing. Chill until ready to serve.
Baby partridge
Arrange lettuce on a serving platter and sprinkle almonds around. Place scoops of salad in mounds as you desire. Use remaining dressing on side. Makes 4 cups.

To toast almonds, place in a skillet over medium heat. Cook, stirring often, about 3 minutes.

Apple Pie

January

unbaked double crust
2#  apples, sliced for baking
1 T. lemon juice
1 c. sugar
2 T. flour
1 t. cinnamon
dash nutmeg
1 T. oleo

In bowl, combine sugar, flour, cinnamon and nutmeg. Gently coat lemon sprinkled apple slices. Fill bottom crust with apples. Dot with oleo. Arrange top crust on pie. Make a few slits. Seal edges and flute. Sprinkle a little sugar on crust. Bake 25 minutes at 375*. Cool.

I use apples given to me from family and friends and return it with this pie.

On fresh Peas: To cook 4 1/2 lbs. fresh peas, shell them and boil in salted water 8 minutes or until tender.
Drain.

Bass Stew

January


1 lb. potatoes
1 lb. carrots
1 stalk celery
1 clove garlic,minced
1 1/2 lb. bass fillets, cut up
1 T. lemon juice
2 T. oleo
salt / pepper
dash paprika

Cube veggies. Boil in water until almost done. Add garlic and fish. Season to taste. Cover and simmer 20 minutes or until fish flakes easily. Add lemon juice and oleo.

The bass was caught near Mulvane, Ks and I froze some. During a cold snap, this was so good, served with crusty rolls and a nice dessert.

Since I began this book years ago, non-stick sprays are everywhere, but I still prefer keeping shortening on hand to bake with and save a lot of money.

When making omelets, add 1 t. baking powder to 4 eggs, beat in thoroughly. This makes a very light fluffy omelet.

Cherry Cheese Bars

January


Crust:
1 c. walnut pieces, divided
1 1/4 c. all-purpose flour
1/2 c. brown sugar, packed
1/2 butter flavored shortening
1/2 c. coconut, flaked
Filling:
2 8oz. pkgs. cream cheese, softened
2/3 c. sugar
2 eggs
1 t. vanilla
1  2.10z. can cherry pie filling

Baby cardinal
Reserve 1/2 c. walnuts fr garnish, chop remaining pieces very fine
For crust: Combine flour and brown sugar. Cut in shortening until finely crumbled. Add the chopped nuts and coconut. Mix well. Remove 1/2 cup and set aside. Press remaining crumbs into a buttered 13" x 9" x 2"
pan. Bake 13 minutes at 350*.
For filling, beat cream cheese, sugar, eggs and vanilla until smooth. Spread over hot crust and bake 15 minutes longer. Spread on cherry pie filling, garnish with crumbs and nuts.

Savory Chicken

January


1 frying chicken, cut up
1/4 t. salt free seasoning
pepper
1/4 t. rosemary
1 t. poultry seasoning
2 T. lemon juice
1/4 c oleo
1/2 t. paprika
1/2 t. savory

Moisten chicken with water. Par dry with a paper towel. Sprinkle with the seasonings, lemon juice and oleo.  Wrap in foil. Bake 1 hour at 375 or until chicken pulls easily from bone. Serves 4

Grilling tips: If you are using bamboo or wooden skewers. soak them in water 3 minutes prior to using.

Place smaller foods in a grilling basket sprayed with a cooking spray to prevent sticking.

Pineapple Salsa

January


1 20oz. can crushed pineapple
1/2 c. red bell pepper, minced
1/4 c. green bell pepper, minced
1 T. green onion, minced
1 t. each: cilantro, jalapenos , lime peel

Drain 1/2 cup pineapple juice from the can. Combine remaining ingredients. Serve as a dip, chilled or as a basting sauce.

As I sat this on the table, I told my children jokingly they could only have a bite. Well, they ate it all.

Hints for Worcestershire sauce:
Baby muskrat
Add a few drops to oleo when sauteing vegetables. Add to pan dripping when making gravy for pork, lamb,or beef Brush cheese slices before grilling sandwiches. Brush both sides of bacon before pan frying.

Strawberry Banana Pancakes

2 c. baking and biscuit mix
1 c. milk
1/2 c. strawberries, thawed, drained
1/4 c. mashed bananas
2 eggs

Beat ingredients with a wire whisk or by hand. Pour 1/4 c. batter onto a hot lightly greased skillet or griddle. Cook until edges are dry, flip only once and cook 1 minute. Serves 5

a super slushy day. It's 40* and mus is everywhere in my home. The new tv show "911" is on and very scary. This recipe goes out to all rescue workers. You are so good.

Super Chicken Nuggets

January 1992 Superbowl Sunday


2 large chicken breasts, split
1/4 c. coconut
1/3 c. sesame seed
1 small box cream cheese, softened
1/2 c. apricot preserves
1 t. curry powder
1/2 t. salt

Skin side down, broil chicken 4" from heat for 20 minutes, turn once and broil until chicken is fork tender.
When chicken is cool enough to handle, remove skin and bones. Grind chicken. Toast coconut and sesame seeds on separate sheets of foil, stirring often. In a large bowl, whip cheese and preserves until just mixed.
Add curry powder and salt to taste. Press chicken into squares and chill over night. Before serving, count 48 chunks and dip in preserves, then coconut, then seeds.

One Skillet Meal

January


1 T. oil
1 1/2lb. ground beef
1 8oz. pkg. shell macaroni
1/2 c. catsup
1 4oz. can sliced mushrooms
1 small can peas, undrained
1 can cheddar cheese soup
2 c. water
1/4 t. celery seed
1 T. onion, chopped

In large skillet, cook meat in oil. Add onion and cook slowly 3 minutes. Add remaining ingredients and simmer 20 minutes or until pasta is tender. Serves 5.

Buying fresh corn:  On ripe ears, look for brown silks and dry ends. Avoid flimsy husks. Poke your thumb into a kernel and look for clear juice, not runny  milky. Use just a dash of sugar to the water for sweeter corn. Recycle those cobs.:)

Fast Lasagna

January 5, 1993


1 lb. ground beef
1 clove garlic, minced
1 box lasagna dinner mix
2 c. hot water
1 16oz. can stewed tomatoes
2 c. cottage cheese
1 c. mozzarella cheese

Brown meat and drain. Stir in pasta, sauce mix, water and tomatoes. Heat to boiling, reduce heat, simmer  covered 20 minutes. Stir in cottage cheese. Sprinkle on mozzarella cheese. Heat 2 minutes. Serves 6

My middle daughter, Debbie,had the table set and this hot meal ready when I came in from work. She served this with green beans and biscuits and sandwich cookies on a cute little tray. This was excellent honey.

Butter Pecan Cupcakes

January 10. 1986


2/3 c. pecans, chopped
2 T. oleo
1 1/4 c. sugar
2 t. vanilla
1/2 c. oleo
2 eggs
2 c. all-purpose flour
1 1/2 t. baking powder
1/4 t. salt
1/3 c.milk
1 tub pecan frosting

Place nuts in a baking dish with the 2 T. oleo and toast at 350* for 15 minutes, stirring often. In a medium mixing bowl, cream sugar, the 1/2 c. oleo and vanilla until fluffy. Add eggs, one at a time, beating well after each addition. Mix dry ingredients together and add alternately with milk. Beat 2 minutes. Fold in nuts. Spoon into greased 18 count muffin cups half full. Bake at 375* for  20 minutes  Cool and frost.

My daughters brought friends home from school and was proud to serve these.

Refrigerator gaskets

The rubber lining known as gaskets, are around the doors. Hold a dollar in the door when you close it. There should be a tug when trying to pull it out. If not, it needs to be cleaned. Improper gaskets effect your food quality.

Peanut Butter Rice Bars

January 24, 1990


1 c. corn syrup
1 c. sugar
1 c. peanut butter
6 c. rice crispies cereal

In a large saucepan, stir syrup, sugar and peanut butter over lo heat, stirring constantly. Bring to a boil then remove from heat. Add cereal and stir to coat. Press into a buttered 13" x 9" x 2" pan. Cool and cut into squares. Makes 32 squares.

Wash fresh vegetables in a little vinegar water to rid them of tons of impurities.

Beef Stew From the Brown's

January


1 lb. stew beef
2 T. flour
2 t. seasoned salt
salt / pepper
2 T. shortening
1 large can tomatoes
1 can water
1 can tomato juice
1 large onion, chopped
3 large potatoes
1 can peas and carrots

Season the flour with seasonings, then coat the meat. Melt shortening in a dutch oven. Brown meat and add all ingredients. Cover, simmer 1 hour or as long for desired doneness.

Confession: I don't peas..period! I hid them in my doll, table leaf crack, gave to pet dog etc.

Spiced Rum Pecan Pie

January 6, 1986


1 9" unbaked pie shell
4 eggs
1/4 c. spiced rum
1 1/2 c. dark corn syrup
2 T. oleo, melted
1/2 t. salt
1 1/2 c. pecans

Preheat oven to 350*. In a large mixing bowl, whip eggs lightly and add rm, corn syrup, oleo and salt.
Arrange pecans in pie shell. Pour in filling. Bake 45 minutes or until pie is set.

A restaurant review: "It would have been faster to walk to the grocers, buy lettuce, rinse it in the bathroom sink, mash the anchovies with the dull end of the pen and grate the Parmesan cheese against the table leg
than to get a Cesar Salad on a bust weekday.

Country Style Meatloaf

January 6, 1985


1 envelope brown gravy mix
1 envelope hamburger seasoning mix
1 1/2 lb. ground beef
1/2 c. carrots, grated
1 egg
4 dill pickle spears
1 6oz. can tomato paste
1 1/2 c. water
2 t. sugar

Mix seasoning mixes together. Combine 1 T. of this to the meat, carrots, and egg. Mix well. On waxed paper, place pickles end to end on center of meat. Roll and seal ends. Place in a 7" x 11" pan. Bake 1 hour at 300*. Combine remaining ingredients and bring to a boil, stirring. Pour over meat loaf. Servers 6

Apple Crisp

January

1 1lb4oz. apple pie filling
3/4 c. corn flakes, crushed
1/2 c. all-purpose flour
1/2 t. salt
1/2 c. brown sugar, packed
1/2 c. pecans, chopped
1/2 c. oleo, softened
1 T. lemon juice
1 t. cinnamon

For topping, mix together cereal, flour, salt, brown sugar, pecans and oleo. Set aside.  In an ungreased 8" square glass casserole, stir together pie filling. lemon juice and cinnamon. Spread topping on apple mixture. Bake 30 minutes at 400* or until crisp.  Serves 4

1 envelope black cherry drink mix
1 c. sugar
6 c. cold water
1 18oz. can unsweetened pineapple juice

Combine and chill.

Butterscotch Pudding

1/2 c. brown sugar
3 T. cornstarch
dash salt
2 c. milk
3 /4 t. vanilla

Combine sugar, cornstarch and salt in a saucepan.  Stir in milk. Cook over medium heat, stirring, bring to a boil and boil 1 minute. Stir in vanilla. Pour into dessert dishes. Makes 2 cups.

Fancy Shake

4 c. milk
3 T. chocolate milk mix
2 bananas, mashed
1/2 pint vanilla ice cream

Combine well. Cover and chill until serving. If you have a blender, this is better. Serves 2

After Dinner Pie

January


2 c. chocolate cream sandwich cookies. crushed
1/4 c. oleo
1/4 c. milk
1 small jar marshmallow creme
dash peppermint extract
3 drops green food color
2 c. whipped cream

Baby llama
Combine crumbs with oleo., reserving 1/2 cup for garnish. Press into bottom of a 9" pie plate. Chill while you continue this recipe. Gradually add milk to marshmallow creme, mixing until well blended. Add extract to taste, add food color drop by drop, fold in whipped cream and pour into crust. Freeze until firm.

Oven Crusty Fish

December



1 egg

1/2 t. hot sauce

1 1/2 lbs. fish filets, thawed

3 T. oleo melted

1 T. water

3/4 t. salt

1 c. corn flakes, crushed

1 t. lemon pepper



Combine egg, hot sauce, and salt. Beat until blended. Drain fish and dip in the egg mixture. Coat with cereal crumbs. Drizzle with oleo and lemon pepper. Bake at 375* for 30 minutes or until fish flakes easily.

Carrot Pineapple Salad

December





2 small boxes lemon gelatin

1 squat can crushed pineapple
2 c. grated carrots


Prepare gelatin. When cooled, add pineapple and carrots. Chill until set.

Mushroom Meatballs

December





1 lb. ground chuck

1 egg

1/2 c. fresh cracked wheat bread crumbs

1 T. Worcestershire sauce

1 c. sharp cheddar cheese, grated

1 t. parsley flakes

1/2 t. basil

1 c. fresh mushrooms, sliced

2 T. flour

1/2 c. beef broth

1/2 c. beef consomme

1/4 c. onion, minced

1 T. oil



Mix meat, egg, bread crumbs, cheese, onion, Worcestershire sauce, parsley and basil. Shape into 12 meatballs. Brown on all sides in the oil 7 minutes. Remove from skillet. Cook mushrooms in the same skillet 3 minutes. Mix flour,  broth and consomme together until well blended.. Gradually add flour mixture to skillet, stirring constantly until mixture boils and thickens, Simmer 1 minute. Return meatballs to skillet and heat.

Serves 6



Pepper Steak

December



1/4 c. catalina dressing

1 boneless beef sirloin steak

1 clove garlic, minced

1 T. oil

1 1/2 c. mushrooms, quartered

1 small onion, wedged

2 green peppers, cut into strips

2 t. cornstarch

2/3 c. beef broth

salt / pepper



Pour dressing over meat, cover and marinate 30 minutes. Cook and stir garlic in oil in a 12" skillet. Add  meat,

cook until browned. Add vegetables,cook and stir 2 minutes or until they are crisp. Mix cornstarch and broth until smooth. Season with salt and pepper. Gradually stir cornstarch mixture to meat and veggies, stirring constantly, bringing to a boil over medium heat. Boil 1 minute until clear and thickened, stirring constantly.

Serve over cooked noodles or rice. Serves 4















Vegetables cooked in a microwave retain more nutrients than those cooked on a stove. They are cooked so quickly, almost 100% of the nutrients are retained.

Hasenfpeffer

January

2 2lb. rabbits, dressed
2/3 c. white vinegar
1 1/2 c. flat beer
1/2 c. onion, sliced
1 c. potatoes, sliced
2 t.salt
1/2 c. flour
4 t. oleo
1 T. sugar
1 T. parsley flakes
1 T. pickling spice

Cut rabbit into chunks. Soak in salted water 1 hour, drain. In a non metal bowl, combine vinegar, beer, onion, potatoes, and seasonings. Mix well and add rabbit. Marinate 48 hours. Drain rabbit and roll in flour.
Melt oleo in a casserole. In oven at 375*, brown rabbit, pour off fat. Add 1 1/2 c. of the marinade and sugar. Cover and bake 1 1/2 hours. Add marinade as needed. Serves 6

When Ginger Snaps

January


3/4 c. shortening
1/2 c. molasses
1 egg
2 c. all-purpose flour
2 t. baking soda
1/2 t. ginger
1/4 t. salt
1/2 t. pumpkin pie spice
3/4 c. sugar
cinnamon sugar

Cream shortening and sugar. Add molasses and egg and beat until well mixed. Combine dry ingredients, stir into creamed mixture. Chill as long as it takes you to sit down and watch a movie. Shape into 1" balls and bake on an ungreased cookie sheet, 12 minutes at 350*. Makes 4 dozen

Rack of Spice Cookies

January


1 c. oleo, softened
1 1/2 c. sugar
1 T. corn syrup
1 t. baking powder
1 egg
2 3/4 c. all-purpose flour
1 1/4 t. ground cloves
1 t. cinnamon
1 t. ground ginger
1/2 t. all spice

Mix dough in order listed. Dough will be stiff. Roll dough into small balls and flatten with hand until thin.
Place on a lightly greased cookie sheet. Bake 10 minutes at 350*. Makes 5 dozen

Use light corn syrup unless your recipe specifies dark.

Hot Fudge Sauce

January

4 T. oleo
4 sq. unsweetened chocolate
2/3 c. hot water
2 t. vanilla
1/4 c. corn syrup
1/4 t. salt
1/2 c. sugar

In a heavy saucepan, melt oleo over lo heat, add chocolate and let melt. Stir in water, sugar, syrup and salt.
Bring to a boil over medium heat. Cook, without stirring until sauce is thickened, dark and glossy, about 8 minutes. Serves 5

Chicken Eggs

January


1 can condensed cream of mushroom soup
8 eggs
salt / pepper
2 T. oleo, melted

Combine ingredients. Cook over low heat in a sprayed or lightly greased skillet until done. Serves 4

Savory is available fresh, whole or ground. I sneak it in a few dishes instead of sage.

January


2/3 c. milk
2 c. sugar
1 c. marshmallow creme
1 c, peanut butter
1 1/2 t. vanilla
oleo

Combine milk and sugar in a large saucepan and boil until mixture reaches 240* or soft ball stage. Remove from heat. Add marshmallow creme and peanut butter. Stir, then add vanilla. Stir until combined. Pour into a buttered 8" pan. Chill 1 hour before serving.

Chocolate Peanut Pudding

January


2 c. cold milk
1/4 c. peanut butter
1 small box instant chocolate pudding/pie mix

Garlic Pasta Sauce

January


1 onion, chopped
1 clove garlic, minced
2 T. olive oil
1 T. sugar
1 lb. can tomato puree
1 6oz.tomato paste
1 c. water 2 T. salt
1/2 t. pepper
1/2 to 1 t. italian seasoning

Saute onion and garlic in olive oil until tender. Add puree, paste and water. Stir until smooth. Add sugar and spices. Simmer 15 minutes. Makes 4 cups.

Chocolate Magic Cake

January 26, 1983


1 3/4 c. all-purpose flour
2 c. sugar
3/4 c. cocoa
2 t. baking soda
1 t. baking powder
1 t. salt
2 eggs
2 t. instant coffee, dry
1 c. water
1 c. buttermilk
1/2 c. oil
1 1/2 t. vanilla

Combine dry ingredients. Add eggs, water, buttermilk, oil, and vanila. Beat at medium speed 2 minutes. Batter will be thin. Pour into 2 greased and floured 9" round cake pans. Bake 40 minutes at 350*. Cool
10 minutes before removing from pans. Cool completley before frosting.

On vitamins:
Vitamin A: good source of beta carotene, found in carrots and light colred vegetables and dark leafy vegetables too.
Vitamin C: citrus fruits, strawberries, broccoli abd cauliflower
Vitamin E: whole grains and breads, nuts, and sunflower seeds.

Noodle and Spinach Bake

January, 7, 1996


Baby goat
8 to 10oz. pkg. narrow egg noodles, cooked, drained
2 T. oleo, melted
salt / pepper
1 small box frozen chopped spinach, cooked and drained
1 c. mushrooms, sauted in oleo
2 c. sour cream
2 c. cooked meat, any kind
buttered bread crumbs, I used left over ham

Mix cooked noodles with melted oleo, salt and pepper. Mix spinach and mushrooms. Combine meat with sour cream. Arrange half the noodles in a greased 2 qt. casserole, add the meat mixture in a layer, then add spinach. Top with remaining noodles. Sprinkle on bread crumbs. Bake at 350* for 30 minutes. Serves 6.

Don't wrestle with a pig. You'll both get dirty, but the pig will enjoy it.

A straight line is the shortest distance between a baby and anything breakable.

Alien Biscuits

January 18, 1990


Baby sheep
2 c. biscuit and baking mix
1 envelope cheese sauce mix
1/4 t. onion powder
1/4 t. salt
3/4 c. milk

In a mixing bowl  combine biscuit mix, cheese sauce mix, and seasonings. Gradually add milk to form a soft dough. Beat 20 strokes or until dough is stiff. Spoon 12 mounds on a greased cookie sheet. Bake 10 minutes at 450*

Snuggling up to watch Alien Nation and using little bottles of jam that came with a gift set for these biscuits.

Most of the time, buy bulk cheese and shred your own. If you have a food processor, even better to save on knuckles.

Success is never final, but failure can be.

Rigatoni and Ham Bake

January 7, 1990


1 t. salt
1 T. oil
3 c. rigatoni, raw
2 c. ham. cooked, cubed
1 c. cheddar cheese, shredded
2 T. oleo
1/4 c. flour
1/4 t. dry mustard
2 1/2 c. milk
1/2 c. cheddar cheese, shredded
3/4 c. potato chips, crushed
parsley flakes

Prepare pasta according to directions, using salt and oil. Rinse. In a large bowl, combine pasta, ham and 1 cup of the cheese. In a medium saucepan, melt oleo. Blend in flour, dash salt and mustard. Add milk. Cook until thickened, stirring. Combine pasta and sauce in a 2qt. casserole. Top with cheese and potato chips and parsley.
Bake 20 minutes at 350*. Serves 4.
Great way to use up holiday ham.

Lasagna Roll Ups

January 7, 1983


3 T. salt
1 T. oil
8 pieces lasagna pasta
1 qt. spaghetti sauce
1 lb. ground beef
1/3 c. onion, chopped
1/2 c. bread crumbs
1/2 t. basil
pepper
1/4 t. Italian seasoning
2 c. mozzarella cheese, shredded
1 egg, beaten
Parmesan cheese

Boil salted water in a dutch oven and add pasta, stirring. Cook, uncovered at a full boil 12 minutes, stirring
twice. Drain and rinse under cold water. Spread half the spaghetti sauce in a 13" x 9" baking dish.
In a large skillet, brown beef and onion, drain. Add bread crumbs, seasonings, cheese and egg.
Cut each pasta piece in half cross wise. Place 3 T. of meat on each. Roll up from shorter side. Place seam side down over sauce and bake 55 minutes at 400*. Sprinkle on Parmesan cheese and rest of sauce.
Serves 8.

Hamburger Taco Dip

January 5, 1995


1 lb. lean ground beef
1 15oz. can tomato sauce
1/2 envelope taco seasoning mix
1 T. flour
2 c. mild cheddar cheese
1 8oz. carton sour cream
1 medium tomato, chopped
1 T. green onion

In a large skillet, brown ground beef. Drain fat. Stir in tomato Sauce and taco seasoning. Simmer, uncovered 5 minutes. Toss cheese with flour and add to meat mixture gradually stirring until cheese melts.
Transfer to a serving bowl and dollop with sour cream, tomatoes and green onions. Serve with tortilla chips.
Makes 3 1/2 cups.

Baby buffalo
It's 10 point pitch night and Jerry, Connie and their two girls Kendra and Andrea come and while the girls take mine, go downstairs to the playroom. Every thing a little girl would want to play house with is down there. I miss them, but little girls grow up. What fun we had crafting.

Chinese Tuna

January 26. 1995


1 box tuna dinner mix, any variety
1 11oz.can mandarin oranges, drained
1 8oz. can water chestnuts, drained
1 flat can tuna, drained
1/4 c. almonds, slivered, toasted

Prepare tuna dinner mix as directed. Add ingredients, heat through. Serves 5

Creamy Lemon Pie

January 17. 1988


1 pie shell, baked, any type
3 eggs, separated
1 14oz, can sweetened condensed milk
1/2 c. lemon juice
3/4 t. lemon peel
3 drops yellow food color
1/4 t. cream of tartar
salt
1/3 c. sugar

Preheat oven to 350*. In a medium bowl, beat egg yolks, Stir in milk, lemon juice and lemon peel, and coloring. Place pie shell on a cookie sheet and pour mixture into it. In a small mixing bowl, beat egg whites with cream of tartar and salt until foamy, slowly  add sugar, continue to beat until almost dry. Spread on pie, making sure to seal edges. Bake 13 minutes or until golden brown. Cool 1 hour. Keep chilled.

Sugar Puffs

January 8, 1992


1 c. milk
1/4 c. water
1/4 c. sour cream
3 T. oil
3 to 3 1/2 c. flour
1 c, rolled oats
1 1/4 t. salt
1 t. grated orange peel
1 pkg. dry yeast
1 egg
topping: mix together: 1/2 c. melted oleo, 3/4 c. sugar, 1 1/2 t. cinnamon, dash ground ginger

In a medium saucepan, heat milk, water, sour cream and oil until very warm. Lightly spoon flour into a
measuring cup and level off. In a large mixing bowl, combine warm liquid with 1 c, of the flour, oats, sugar,
salt and orange peel, yeast and egg. Beat 2 minutes on medium speed. Stir in remaining flour. Knead 5 minutes on a floured surface. Place in a greased bowl, cover and let rise 1 hour. Divide dough into 18 balls and place in greased muffin tins. Cover and let rise 45 minutes. Bake 20 minutes at 375*. Cool 3 minutes.
Roll puffs in the topping.

Brunswick Stew

January 17, 1994


2 lb. chicken drumsticks and thighs
1 t. each: salt, paprika, poultry seasoning
2 T. oil
1 large onion, ringed
1 large can tomatoes, chopped
1 1/2T. worcestershire sauce
dash hot pepper sauce
1 c. frozen corn
1 c. frozen lima beans
1 c. mashed potatoes
croutons

Sprinkle seasonings on chicken. Heat oil in a dutch oven. Cook chicken in oil 7 minutes, turn, add onions. Cook 5 minutes add tomatoes, worcestershite sauce and hot sauce, Cover and simmer 30 minutes.
Stir in veggies and cook 15 minutes. Stir in potatoes. Garnish and serve with croutons. Serves 6

Seven Minute Frosting

January


2 egg whites
1 1/2 c. sugar
5 T. chilled water
1/4 t. cream of tartar
1 1/2 t, corn syrup

In top of a double boiler, blend ingredients, whipping with a wire whisk. Boil and whip for 7 minutes. Use on a cooled cake. Makes 2 cups.

You can make a double boiler buy putting a 2 cups of water in a pan, fit another pan over it, but don't let the water touch the top pan.

This recipe is from a recipe pamphlet dating 1932

Pumpkin Bars

January


2 c. canned pumpkin
1 1/2 c. sugar
3/4 c. oil
2 c. all-purpose flour
1/2 t. salt
2 t. cinnamon
1 t. baking powder
1 c. chopped pecans

In a mixing bowl, blend pumpkin, sugar and oil. Set aside. In another bowl, blend remaining ingredients, except pecans. Ad to pumpkin mixture. Stir in pecans and blend well. Place in an ungreased 11" x 9" baking pan. Bake 25 minutes at 350*

I love this recipe. It is from step-mother, Josephine's collection. She gets an  A+ in baking.

Pillows and Popcorn

January 18, 1988


4 T. oleo
4 c. Rice Chex
6 c. popped corn
1 small can french fried onions
1/2 c. grated dry American cheese

Preheat oven to 325*. In a 13" x 9" x 2" pan, melt oleo. Stir in cereal, popcorn and onions. Stir to coat. Sprinkle on cheese, stirring. Bake 15 minutes, stirring once. Makes 10 cups.

You can eat Bachelor's Buttons, Daisies, Dianthus, Forget Me Nots, Gardenias, Honeysuckle, Impatiens,

Golden Omelet

January 6, 1983


6 eggs, separated
2 T. milk
1/4 t. salt
1/3 c. green onions
2 T. cheese spread
3 crispy strips of bacon, crumbled
2 T. oleo, melted

Combine egg yolks with milk and salt, beat until thick and lemony. Fold in stiffly beaten egg whites and onions, Pour mixture in a 10" iron skillet or an oven proof pan. Add melted oleo. Bake at 325*, 12
minute or until firm. Put cheese and bacon on one half of the eggs until cheese begins to melt. Remove from oven and make a crease across the center. Slip turner underneath and fold in half. Add remaining cheese.
Serves 4

I used brown eggs, fresh from Mary Marshall's farm.

Baby Pidgeon
To make clover leaf rolls, form bread dough into small balls. Dip each ball in melted oleo and place 3 in a greased muffin tin. Let rise until doubled and proceed as directed.

Frozen Yogurt

January 31, 1996


2 c, plain yogurt
1/4 c. orange juice concentrate
1 t. vanilla extract

In a medium bowl, mix ingredients. Freeze 4 hours, stirring hourly. Serves 4

Sghetti and Mushrooms

January 31, 1996


8oz. spaghetti, I prefer bucatini which is a cylinder
1/2 c. oleo, divided
1 1/2 c. fresh mushrooms, sliced
1/4 c. onion
1/3 c. milk
2/3 c. Parmesan cheese

Cook pasta according to directions, drain. Meanwhile, in a large skillet, melt half the oleo, add onions and mushrooms and cook until tender. Add remaining oleo and let melt. Stir in milk, heat through. Gradually add cheese, tossing to blend. Serves 5

It is cold and icy. I am still finding pine needles embedded in the carpet. Geraldo Rivera is on talking Hollywood gossip.

Devilish Dip

2 cans deviled ham
1/4 c. horseradish
1/4 c. sour cream
2 T. dill pickle relish
1 1/2 T. Worcestershire sauce

Mix and serve warm with hard crackers.

Another cold and sunny Friday. Trai and Devin are watching Gullah Gullah Island and I'm making goodies for my Knock Poker game tonight..Beer time!

Baby O'possum
Guess what? We have 12" of beautiful snow. The best way to get around is on foot. It's not too cold, 28* and no wind. You girls are restless and quarrelsome, the sewer backed up, the washer is clunking. Oh my, a challenge..I love you dearly.

Hot Rolls

December


1/2 c. flat beer
1 pkg. dry yeast
1/2 c. evaporated milk
1 T. sugar
1 1/2 t. salt
2 1/2 c. all-purpose flour
2 T. oleo

Heat beer until warm, not hot, and place in a large mixing bowl. Sprinkle yeast on top, let stand 10 minutes.
Stir in oleo, stir well, then add remaining ingredients. Turn onto a lightly floured board and knead 10 minutes or until smooth and stretchy. Place in a large greased bowl. Turn to coat dough. Cover and let rise in a warm place 1 hour. Punch down and shape into 12 balls. Put into greased muffin tin. Let rise 30 minutes in a warm draft free area. Bake 10 minutes at 425*.
