1 lb. cooked ham, cubed
1 12oz can apricot nectar
1/4 c. raisins or currants
1 T. vinegar
2 t. cornstarch
1 t. pumpkin pie spice, optional
2 t. oleo, melted
1 pear,cored, cubed
1 red apple, cored and cubed
4 c. cooked rice
In a large heavy skillet, cook fruit in oleo until tender. Add nectar, stir well. Add remaining ingredients, except rice. Cook, stirring until thickened and bubbly. serve over rice. Serves 5
After Christmas, this recipe is a great way to use up fruit basket gifts and serve a cheese tray on the side and/or a candy tray.
