Apple Muffins

December


2 c. all-purpose flour
4 t. baking powder
3/4 t. cinnamon
1/3 c. shortening, melted
3/4 t. salt
1/4 c. sugar
1/4 t. nutmeg
1 c. milk
3/4 c. fresh cut apples

Sift dry ingredients together. Combine milk, egg and shortening. Pour over dry ingredients and stir just enough to moisten. Stir in apples. Grease a muffin tin and fill 2/3 full. Bake 40 minutes at 350* or until golden brown.

About spices:
Evey kitchen has the most common herbs and spices but secrets abound in many recipes because a good cookbook author will scare you away with words like cardamon and turmeric or star anise. but keep them around in small quantities.

All-spice: a mixture of cinnamon, nutmeg and cloves. Dare yourself to use it cake or ham recipes.
Cardamon: great in cake or cookies, just a dash
Curry powder: a blend of ginger, pepper, mustard, caraway, cinnamon and turmeric. A secret in creamy casseroles
Mace: use like nutmeg
Poppy seed: I put this in many muffin recipes or fruit salads
Turmeric: a root herb, I add to chicken creamed dishes for its yellow coloring and rice saffron dishes
