Super Chicken Nuggets

January 1992 Superbowl Sunday

2 large chicken breasts, split
1/4 c. coconut
1/3 c. sesame seed
1 small box cream cheese, softened
1/2 c. apricot preserves
1 t. curry powder
1/2 t. salt

Skin side down, broil chicken 4" from heat for 20 minutes, turn once and broil until chicken is fork tender.
When chicken is cool enough to handle, remove skin and bones. Grind chicken. Toast coconut and sesame seeds on separate sheets of foil, stirring often. In a large bowl, whip cheese and preserves until just mixed.
Add curry powder and salt to taste. Press chicken into squares and chill over night. Before serving, count 48 chunks and dip in preserves, then coconut, then seeds.

I took this next door where people were gathered to watch the Superbowl. This was first to go:)

One good thing about being wrong is the joy it gives to others.
