Baked Breast of Chicken

December 17, 1995

1 small onion, thinly sliced
2 chicken breasts, boneless, skinless
1 t. mustard
1 t. salad dressing
2 carrots, thinly sliced
1 small zucchini, sliced 1/4" thick
1 small can mushrooms, drained
salt / pepper
1 T. oleo
1/4 t. each: basil, garlic powder, poultry seasoning

Preheat oven to 450* Prepare 2 sheets of heavy duty aluminium foil by spraying with any non stick spray. On each sheet, place onions and flattened breasts. Combine mustard and salad dressing and spread over chicken. Add veggies, dot with oleo and sprinkle on seasonings. Make a pocket seal and place on a large cookie sheet. Bake 20 minutes. To serve, make an X on foil and peel back. Serves 2

A romantic meal for 2, add holiday scented candles and soft string music..

We watched "Miracle on 34th Street" today.
